Elementary Nutrition Education
In the fall of 2021, I took a course entitled Strategies for Nutrition Education and Health Behavior Change at Teachers College, Columbia University which culminated in a designing and implementing two nutrition education sessions. My classmate and I delivered interactive nutrition lessons to a third grade class at a local school in New York, New York. In understanding that the majority of U.S. children do not meet recommendations for a nutritious diet, and in confirming this to be true through surveying the class, we arrived at two behavior change goals for the third graders: increasing vegetable intake and decreasing ultra-processed snack consumption. My classmate and I enjoyed creating engaging, age-appropriate lessons filled with food tasting, games, puzzles, and story-time!
